I was so excited to receive The Forest Feast cookbook for my birthday this month. The first recipe I made was the Butternut Squash Caprese salad. It was AMAZING!! It’s a traditional caprese salad with the addition of roasted butternut squash, avocado and smoked mozzarella. While those ingredients may seem like an odd combination to include in a caprese salad, trust me when I say, try it! It made for a hearty and filling lunch with a blend of unique flavors.
